Easy Backyard Grilling Menu

Fire up the grill! We have an easy, finger-licking backyard grilling menu you’ll want to whip up this weekend, and then again … and again … and again—all summer long.

Chef Erik Niel may be a 2016 James Beard semifinalist for Best Chef: Southeast and the owner of two popular Chattanooga, Tennessee, restaurants (Main Street Meats and Easy Bistro & Bar), but the Louisiana-born-and-bred chef also throws a mean backyard cookout. And the best part? He swears anybody can re-create his menu at home! (Even me, a total grilling novice. I asked.)

“The fun of this whole thing is doing it family style,” says Niel. “Less fuss and more fun.” And that’s just our style.

Chef Erik Niel’s Go-To Sunday Night Grilling Menu:

Grilled Summer Rib Roast

“I love rib roasts for family gatherings, whether you’re preparing them inside or outdoors. Outside, though, rib roasts are even better, over open coals. You just cut fresh herbs from whatever herb garden you have, smash them together, and rub it all over the rib roast.”

Charred Vidalia Onions, Summer Squash, Tomatoes & Basil

Sides are a breeze when you’re grilling out, says Niel. “I always make sides that I can throw on the grill right next to the rib roast.”

Summer Peaches with Lemon Pound Cake and Fromage Blanc

“I keep it super simple for dessert,” says Erik. “I’ll already be tired from grilling and drinking
gin & tonics all afternoon!”

Erik’s Back Porch Gin & Tonic

Beefeater gin, Fever Tree tonic, lime, “and a splash of Cappelletti Amaro to make it fancy. I’d serve it in a styrofoam cup, because G&Ts are better in the summertime in a styrofoam cup.”

So there you have it, folks! You’re officially allowed to use styrofoam cups at your backyard barbecue—Chef says so.
